
If you’ve been with us a while, you already know that our beloved coffee beans are the seeds of the coffee cherry. We’ve explored the washed and natural methods used to remove fruit from the beans, but there is a hybrid technique that produces some of our most intensely flavorful coffees.
Semi-washed coffees begin like washed coffees, where the outer cherry skin is separated from the inside bean. But instead of soaking in a fermentation tank, the beans dry in sunlight where the remaining moisture and cherry mucilage ferment, leaving a papery parchment on the bean.
The parchment is removed to reveal a signature deep blueish-green bean. The beans are then hand-sorted to ensure that only the most perfect beans travel to our roastery.
We love semi-washed coffees for their full body and robust flavors.
